So I recently re-read A Long Journey Home, and read the Wizard from Earth, and was looking for other fics that maybe fir a similar pattern. Doesn't have to be specifically going back to Egypt, or even time travel I guess (though preferable), but definitely looking for stories in the vein of unnaturally long lifespans and the such.

Not exactly what you're looking for since it's not time travel and it's a crossover, but The Shadow of Angmar has an immortal Harry. We're not yet to the point where he has lived an unnaturally long life, but it will come.
It's a Lord of the Rings crossover, with Harry that comes into that world, but you don't really need a knowledge of it to read it (I haven't and that didn't bother me).

I've only read like 2 quality HP fanfictions in my life.

 

Two quality HP fanfictions?.. well, everyone is entitled to their opinion, but there are a lot of fics in the Harry Potter fandom with great technical writing and characterization. Many of them have slower pacing than Wizard of Harrenhal, too.
